Equipment

  • 1 KitchenAid Stand Mixer Use dough hook attachment for smooth mixing.
  • 1 Baking sheet Use a 18 by 13 inch stainless steel or aluminum parchment-lined sheet for easy release.
  • 1 Mixing bowl Use glass or ceramic; glass is non-porous for cleaner mixing.
  • 1 Rolling Pin Use a 12 to 15 inch wooden or stainless steel pin for even rolling.
  • 1 Cutting board Use a 12 by 18 inch wood or bamboo non-slip board for safe, microplastic-free cracker cutting.

Ingredients
  

  • 1 cup Organic brown rice flour (120 g or 4.2 oz) Gluten-free, provides neutral base for ginger flavor.
  • 1/2 cup Organic arrowroot starch (60 g or 2.1 oz) Enhances crispness, keeps cracker light. Arrowroot starch is preferred over tapioca starch for a smoother, less processed texture and neutral flavor that complements ginger, plus it’s easier to digest.
  • 2 tbsp Organic fresh ginger (grated) (30 g or 1.1 oz) You can also use 2 tsp organic powdered ginger for bold flavor.
  • 1/4 tsp Celtic sea salt (1.2 g or 0.04 oz) You can use Celtic or Himalayan pink for mineral-rich taste.
  • 2 tbsp Organic honey (42 g or 1.5 oz) Adds natural sweetness to balance ginger’s zest.
  • 1/4 cup Filtered water (60 g or 2.1 oz) You can adjust to achieve proper dough consistency.

Instructions
 

  • Mill organic brown rice in KoMo XL Plus grain mill at finest setting; doesn’t need to be double ground.
  • Mix milled organic brown rice flour, organic arrowroot starch, and Celtic sea salt in KitchenAid stand mixer with dough hook; add organic powdered ginger only if using, not fresh ginger at this step.
  • Add grated fresh ginger, organic honey, and filtered water to mixer to form dough, skipping fresh ginger if powdered ginger was used.
  • Roll dough thin on cutting board using rolling pin.
  • Cut dough into rectangular crackers (about 6 by 1.5 inches) to match large Three Musketeers bar size.
  • Bake crackers on baking sheet in oven at 350°F for 12 minutes. 
  • Let crackers cool on baking sheet for 30 minutes.
  • Store cooled crackers in airtight container or enjoy as a snack.
